The thing is, that's not much different to existing power plants. While gas can start and stop relatively quickly, nuclear power stations tend to operate in a way which makes reducing their power output difficult. Coal can reduce somewhat quickly, but that places thermal stress on the plant, which can damage it. But, luckily, we have lots of things which can take advantage of excess production - be it batteries or smelters.
